Ingredients:
For the Rice:
- 2 cups glutinous rice
- 1 cup regular rice
- 1 cup coconut milk
- 1 tablespoon fenugreek seeds
- 1 teaspoon salt
For the Fish Curry:
- 500g fish (mackerel or tuna)
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tablespoons chili paste
- 1 tablespoon turmeric powder
- 1 tablespoon coriander powder
- 1 teaspoon salt
- 2 cups coconut milk
- 1 cup water
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 2 tablespoons oil
Instructions:
For the Rice:
1. Rinse the glutinous rice and regular rice together until the water runs clear.
2. Soak the rice in water for at least 4 hours or overnight.
3. Drain the rice and transfer it to a steamer lined with banana leaves.
4. In a small saucepan, heat the coconut milk, fenugreek seeds, and salt until it comes to a simmer.
5. Pour the coconut milk mixture over the rice in the steamer.
6. Steam the rice for about 30 minutes or until it is cooked through and fluffy.
7. Remove from the steamer and let it cool slightly before serving.
For the Fish Curry:
1. Heat the oil in a large pot over medium heat.
2. Add the chopped onions and minced garlic and sauté until they are fragrant and golden brown.
3. Add the chili paste, turmeric powder, coriander powder, and salt. Stir well to combine.
4. Add the fish and cook for about 5 minutes, or until it is cooked through.
5. Pour in the coconut milk and water and bring the mixture to a simmer.
6. Add the bruised lemongrass stalks and kaffir lime leaves.
7. Simmer the curry for about 15 minutes, or until the flavors have melded together.
8. Remove from heat and serve with the Nasi Dagang.
