A Traditional Malay Pickle with a Twist

Ingredients:
For the pickle:
- 1 cucumber, julienned

- 1/2 cup of white vinegar
- 1/2 cup of water
- 1 tablespoon of sugar
- 1 teaspoon of salt
For the spice paste:
- 5 shallots
- 3 cloves of garlic
- 1 inch of ginger
- 1 inch of galangal
- 1 tablespoon of turmeric powder
- 1 teaspoon of coriander powder
- 1 teaspoon of cumin powder
- 1 teaspoon of fennel powder
- 1 teaspoon of chili powder
Instructions:
Step 1: Preparing the spice paste
In a blender or food processor, blend together all the ingredients for the spice paste until smooth.
Step 2: Pickling the vegetables
In a large bowl, combine the cucumber, carrot, pineapple, red onion, and chilies. Mix well.
In a small saucepan, bring the white vinegar, water, sugar, and salt to a boil. Once it boils, remove from heat and let it cool slightly.
Pour the pickling liquid over the vegetables and mix well. Make sure all the vegetables are coated with the liquid.
Cover the bowl with plastic wrap and let it sit at room temperature for at least 2 hours, or overnight in the refrigerator for better flavor development.
