- 3 tablespoons oil

- 1 onion, sliced

- 2 stalks lemongrass, bruised

- 1 tablespoon soy sauce

- 1 tablespoon oyster sauce

- Salt and pepper to taste

Instructions

Step 1: Prepare the Sambal

1. Drain the soaked dried chilies and add them to a blender or food processor.

2. Add shallots, garlic, ginger, belacan, tamarind paste, oil, sugar, and salt into the blender.

3. Blend until you get a smooth paste. Set aside.

Step 2: Cook the Beef

1. Heat oil in a large pan or wok over medium heat.

2. Add sliced onions and bruised lemongrass and sauté until fragrant.

3. Add the beef slices and cook until they are browned on all sides.

4. Add the prepared sambal paste to the pan and stir well to coat the beef.

5. Reduce the heat to low, cover the pan, and simmer for about 30 minutes or until the beef is tender.

6. Add soy sauce, oyster sauce, salt, and pepper to taste.

7. Continue to simmer for another 5 minutes to allow the flavors to meld together.
