Ingredients

For the curry paste:

  • 1 tablespoon of turmeric powder
  • 1 tablespoon of coriander powder
  • 1 tablespoon of cumin powder
  • 1 tablespoon of fennel powder
  • 1 tablespoon of black pepper
  • 1 tablespoon of salt

For the dish:

  • 500 grams of fresh mackerel fish, cleaned and cut into pieces
  • 1 cup of coconut milk
  • 2 cups of water
  • 3 tablespoons of cooking oil
  • 1 cinnamon stick
  • 3 cardamom pods
  • 3 cloves
  • 2 stalks of lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 tomato, cut into wedges
  • 1 tablespoon of tamarind paste, mixed with 2 tablespoons of water
  • 1 tablespoon of palm sugar
  • Salt, to taste

Instructions

To make the curry paste:

  1. In a blender or food processor, blend together the shallots, garlic, lemongrass, ginger, galangal, dried red chilies, turmeric powder, coriander powder, cumin powder, fennel powder, black pepper, and salt until a smooth paste is formed.

To make the dish:

  1. In a large pot, heat the cooking oil over medium heat.
  2. Add the cinnamon stick, cardamom pods, and cloves, and sauté until fragrant.
  3. Add the curry paste and cook for 5 minutes, stirring constantly.
  4. Add the coconut milk, water, lemongrass, kaffir lime leaves, tomato, tamarind paste, palm sugar, and salt. Bring to a boil.
  5. Add the mackerel fish to the pot and simmer for 10-15 minutes, or until the fish is cooked through.
  6. Remove from heat and serve hot with steamed rice or roti canai.
