- 2 cups of water
- 3 tablespoons of cooking oil
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 2 stalks of lemongrass, bruised
- 3 kaffir lime leaves
- 1 tomato, cut into wedges
- 1 tablespoon of tamarind paste, mixed with 2 tablespoons of water
- 1 tablespoon of palm sugar
- Salt, to taste
Instructions
To make the curry paste:
- In a blender or food processor, blend together the shallots, garlic, lemongrass, ginger, galangal, dried red chilies, turmeric powder, coriander powder, cumin powder, fennel powder, black pepper, and salt until a smooth paste is formed.
To make the dish:
- In a large pot, heat the cooking oil over medium heat.
- Add the cinnamon stick, cardamom pods, and cloves, and sauté until fragrant.
- Add the curry paste and cook for 5 minutes, stirring constantly.
- Add the coconut milk, water, lemongrass, kaffir lime leaves, tomato, tamarind paste, palm sugar, and salt. Bring to a boil.
- Add the mackerel fish to the pot and simmer for 10-15 minutes, or until the fish is cooked through.
- Remove from heat and serve hot with steamed rice or roti canai.
