- 500g dried fish (ikan kering), soaked in hot water
- 2 cups coconut milk
- 2 cups water
- 2 tomatoes, cut into wedges
- 2 tablespoons tamarind paste, mixed with 4 tablespoons water
- 1 tablespoon sugar
- Salt to taste
- Cooking oil
Instructions:
1. In a blender or food processor, blend all the ingredients for the spice paste until smooth.
2. Heat some cooking oil in a large pot, then fry the spice paste until fragrant.
3. Add the dried fish and stir well to coat it with the spice paste.
4. Pour in the coconut milk and water, then bring to a boil.
5. Reduce the heat and simmer for about 20 minutes, or until the fish is tender.
6. Add the tomatoes, tamarind paste mixture, sugar, and salt. Stir well and simmer for another 5 minutes.
7. Remove from heat and let it rest for a few minutes before serving.
8. Serve hot with steamed rice and enjoy!
