Ingredients

- 150g icing sugar
- 1 teaspoon vanilla essence
- 2 egg yolks
- 350g all-purpose flour
- 50g cornflour
For the coconut filling:
- 200g grated coconut
- 150g sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla essence
- 2 tablespoons water
Instructions
1. In a large mixing bowl, cream the butter and icing sugar until light and fluffy.
2. Add in the vanilla essence and egg yolks, and mix well.
3. Sift in the all-purpose flour and cornflour, and mix until a dough forms.
4. Divide the dough into small portions and shape them into balls.
5. In a separate bowl, mix together the grated coconut, sugar, salt, vanilla essence, and water to make the coconut filling.
6. Take one ball of dough and flatten it with your hands. Place a small amount of the coconut filling in the center and fold the dough over it, sealing the edges.
7. Repeat this process with the remaining dough and filling.
8. Place the filled dough balls onto a baking tray lined with parchment paper.
9. Bake in a preheated oven at 180°C for 15-20 minutes, or until golden brown.
10. Allow the cookies to cool before serving.
